Cheesy Chicken + Ranch Quesadillas

What what what what what.


What?

I hardly even recognize this food. This is the first time I've posted a recipe that is not a dessert [or dessert pretending to be breakfast or a snack or something] in over a year and a half. That's a long time without any "real" food! [I do eat actual meals on occasion] Anyway. I have decided that I am going to post at least two non-dessert recipes each month [making my new year's resolutions a month early] and if I can keep that up for a little while, I'll try for four non-dessert recipes a month. Baby steps.

Have no fear though. I will still remain primarily a desserts blog, I'll just try to make/eat something that actually constitutes a meal a couple times a month. No big deal. Still plenty of chocolate. Still plenty of sugar. Still plenty of sprinkles [just wait till next post!]. I'm quite excited to do this because I really do love all food. Even vegetables. And proteins. And especially cheese. I think it'll be fun to experiment with some of my favorite dishes like pizza and salads, sandwiches and mac n cheese.

Oh and quesadillas. I love quesadillas.


And it's kind of weird because I'm not really a huge fan of Mexican food. I enjoy tacos and nachos. But I don't really like burritos or enchiladas. I think it's the re-fried beans. I'm just not big on beans in general. And I definitely don't like spicy food. These Cheesy Chicken + Ranch Quesadillas have no spice at all. Although, I am a little bit sad about these because they were supposed to be my favorite combination ever - chicken bacon ranch BUT we had no bacon in the house. None. Can you believe that?

Even though these were bacon-less though, they were still absolutely phenomenal. They took less than a half hour to prepare, heat and serve. These quesadillas combine so many ingredients I love and the texture is amazing! So much crunch! And like I said, these are just about the easiest things to throw together as long as you have some cooked chicken. Mine was breaded and cooked on a stove top the night before for dinner. Quesadillas are a great way to use up leftovers!

Cheesy Chicken + Ranch Quesadillas

Prep Time: 20 minutes      Total Time: 30 minutes
Cook Time: 10 minutes     Yield: 2-4 servings

4 (8") tortillas
8 oz chicken breast, cooked
1 cup shredded mild cheddar cheese
4 tablespoons ranch dressing
1 cup diced lettuce
1 small tomato, diced

In a skillet over medium heat, heat the tortillas, one at a time, about 30 seconds a side to lightly brown each side. Remove from pan; set aside.
Preheat oven to 350 degrees. Line a baking sheet with aluminum foil. Place two of the browned tortillas on the lined tray. Roughly chop the chicken and sprinkle evenly over each tortilla. Add 1/2 cup shredded cheese to each and place in the oven for 2-5 minutes until chicken is hot and cheese is melted. Drizzle with ranch dressing and top with lettuce, tomato and remaining tortillas. Slice and serve immediately.


I'm eating this for breakfast. And lunch.
