So guess what I did on Monday!
Well. What I was supposed to do. On Mondays, I have this Personal Nutrition class and I have yet to actually go to that class. Classes started two weeks ago, but the Monday two weeks ago was Martin Luther King Jr. Day and this past Monday, the college shut down because of severe weather. For that class, we're going to have to write down everything we eat for one week. I'm sure my professor is just going to love my eating habits. I eat pretty average stuff, but when you get to dessert, it'll probably go something like: four cookies after lunch, a cupcake for a snack and a few brownies after dinner. Okay, maybe not that bad, but I do bake all of the time, so there is always some kind of dessert around.
So back to what I actually did do on Monday. I made some cookies. Awesome cookies. Actually, I think they are technically called "cookie cups", so I'm calling this recipe Frosted Cookie Cups. These are soooo goooooood. We start with a chocolate chip cookies which is phenomenal in and of itself. But if you add some cookie dough buttercream on top and maybe just a few chocolate sprinkles because they look pretty, you'll take these waaaay over the top! It's like chocolate chip cookies on steroids [and who wouldn't want that!?] Talk about addicting - I could not stop eating these. They're way too good.
Thankfully, I don't have to start that "monitor-your-eating-for-a-week" thing yet. Enjoy :)
Frosted Cookie Cups (Inspired by: The Baker Chick)
Cookies:
1-1/2 sticks butter, melted & cooled slightly
1 cup brown sugar
1/2 cup granulated sugar
2 teaspoons vanilla
1 egg + 1 egg yolk
2-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups mini chocolate chips
Frosting:
1-1/2 sticks butter, softened
1/2 cup brown sugar
1-1/2 cups confectioner's sugar
1/2 cup all-purpose flour
1/2 teaspoon salt
1-1/2 tablespoons milk
1-1/2 teaspoons vanilla
Chocolate sprinkles, optional
Preheat oven to 325 degrees. Lightly grease two mini muffin pans.
In a large mixing bowl, cream melted butter and sugars. Add in egg, egg yolk and vanilla just until combined. Slowly add in flour, baking soda and salt. Stir in chocolate chips.
Drop tablespoons of dough into the mini muffin pans. Bake for 10-12 minutes or until set. Cool completely.
Frosting: Cream together butter and brown sugar in a large bowl. Mix in confectioner's sugar until smooth. Beat in the flour and salt. Mix in the milk and vanilla until smooth and well blended.
Frost cookies as desired and top with sprinkles if desired. YIELD: about 4 dozen cookie cups
