Soooo. You all know how obsessed I am with pizza.
instagrammed (let's pretend that's a word) a picture. I instagram a picture any time I eat pizza; it's kind of a necessity]. And the third reason is this: the pizza place where we usually go has these incredible lava cakes. The only bad thing about that is that we hardly ever get them. So I took it upon myself to make them at home.
I found this great recipe for these Bite Size Chocolate Lava Cakes and I could not be happier with the outcome! These were ridiculously easy to make and they tasted incredible. Let's start by talking about the batter. Oh my. This batter was kind of like chocolate ice cream meets brownie batter meets chocolate mousse and let me tell you, it was absolutely amazing! After you bake them up, they turn into these little cakes that are oozing with melted chocolate. If you serve them with strawberries and powdered sugar, you've got something so so so delicious and addictive. Gah. I could ramble about these for a while.
A Kitchen Addiction)
4 tablespoons butter, softened
1/3 cup sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
8 ounces semi-sweet chocolate, melted
Preheat oven to 375 degrees. Lightly grease two mini muffin pans.
In the bowl of a mixer, cream together butter and sugar. Add eggs one at a time, beating well after each addition. Beat in flour and salt at low speed until combined. Stir in melted chocolate.
Spoon batter into prepared pans.
Bake for about 5 minutes or until center is still soft and edges are just set. Cool for 4 minutes before turning out onto a serving tray. Dust with powdered sugar and serve with strawberries. YIELD: about 28 bite size cakes
