I'm at my grandma's. She lives in a different state. She had eye surgery on Monday, so I came down to spend a week with her and take care of her while she's recovering. She's probably doing okay and I'm probably having fun [I wrote this post ahead of time]. My grandma doesn't have wifi, so I couldn't really write this post while I am at her house. I was considering doing it from my phone. I have voice control, so I could have just talked into my phone, but it would have been a little difficult to get the pictures into the post. Basically, I figured that it would just be most simple to write the post ahead of time.
So here we are. And now it's time to discuss these cupcakes. Well really the frosting. The cupcake is this recipe, but I left the peanut butter cup out so it's just a plain chocolate cupcake. The frosting is Hot Cocoa Frosting and it is so ridiculously good! It had a bit of a light and airy, almost whipped texture and there was plenty of hot cocoa flavor! Dry hot chocolate mix is combined with heavy cream and steamed on the stove. After it cools a bit, you whip it into the butter/sugar and you're done! Simple and easy but completely delicious! Oh, make sure you top the cupcakes with a mini marshmallow. Enjoy :)
Hot Cocoa Frosting (Source: Cookies and Cups)
Cupcake recipe HERE
1/2 cup butter, room temperature
4 cups powdered sugar
1/2 cup dry hot chocolate mix (without mini marshmallows)
1/3 cup + 1 Tbsp heavy cream
In a small saucepan combine hot chocolate mix and cream. Heat over medium until hot and steaming...not quite boiling, stirring consistently. You want the sugar in the hot chocolate to dissolve. Set aside.
In large mixing bowl cream butter until smooth.
Add in powdered sugar and mix until combined. It will be very dry.
Turn mixer to low and slowly pour in your hot chocolate mixture. Once all is added turn mixer up to medium and beat for about a minute until light and fluffy, scarping down sides of bowl when necessary.
Spread or pipe on cupcakes.
